Ancient Town of An Ling

Invested by the Taibai Holy Snow Agricultural Development Limited Corporation of Mei County, the ancient town has been built, which consists of three streets and five areas, including streets of Guanzhong Food, Qinghai Food, Sichuan Food and areas of special snacks, so that will be the heaven for those who love enjoying food. There is an interesting and complicated Chinese saying about the local delicious food, such as Ganmianpi, kebabs, sheep blood, Douhua and other local flavors, which reflects how delicious the local food is.

Buckwheat Noodles (Hele made of buckwheat flour)
Buckwheat noodle is one of the famous cousins for Han people in Shaanxi Province. Regarded as one of the three noodles in northern part of China, it has enjoyed the same reputation as Lanzhou noodle and Daoxiao noodle. Buckwheat noodle was called “He Lou” in ancient times. In “Agricultural Book of Buckwheat” written by an agriculturalist in Yuan Dynasty, it was recorded that at the back of the mountains in the North, people preferred to plant buckwheat, then eliminated the shells and grounded them into powder to make breads. He Lou was made of buckwheat powder, so it has been named as buckwheat noodle.
In Han Cheng County, buckwheat noodles are made in a special machine, and they looks like very long and thin noodles in round shape. Matched with very delicious mutton soup in it, people called it buckwheat noodles with mutton, so it’s very popular in Han Cheng. There’s another way to eat. You will enjoy the cold buckwheat noodles by adding some ingredients like red chili oil, mashed garlic and mustard with a few bean jelly in it, then it will surprise you with a special flavor, which has a high nutritional and medicinal value. According to The Compendium of Materia Medica written by Li Shizhen, buckwheat is very good to health. Because buckwheat is a kind of cold plant, when you eat buckwheat noodles, you need three hot ingredients like red chili oil, garlic and mustard.
Tartary buckwheat is rich in fat, about 2.1%--2.8%, Under normal temperature, it shapes like lime-green and insipid solid, which is different from other grains. The fat in tartary buckwheat contains 9 fatty acids. Among them, the highly-stable and anti-oxidant unsaturated fatty acid, oleic acid and linoleic acid occupy 87% of fatty acids.

The tartary buckwheat powder contains large amount of Vitamin B1, Vitamin B2, Vitamin PP and Vitamin P. Among them, Vitamin B1 & B2 occupies a large percentage. The amount of Vitamin B1 & PP is much more that it in rice. The amount of  Vitamin B2 is also 1—4 times more than it in wheat, rice and corn, which will promote growth, improve digestion and prevent inflammation. Buckwheat also contains Vitamin B6, while tartary buckwheat only contains the Vitamin B6 about 0.02mg/g. Besides, tartary buckwheat also contains stearic acid, tetradecanoic acid and other unknown acids. Tartary buckwheat powder with 2.51% of stearic acid and 0.35% of tetradecanoic acid contains many kinds of nutritious minerals, which has aroused great attention for the function of human body and the nutrition of food. It is known that tartary buckwheat carries all those nutritious minerals like magnesium, potassium, calcium, iron, zinc, copper and selenium, which are good for health. The great amount of magnesium, potassium and iron shows that tartary buchwheat has great nutritional and healthy functions. Frequently eating food of buckwheat is very healthy to the middle-aged and the elders. What’s more, it is good for the growth of children and the growth of brain. Many experts appeal that more and more coarse cereals should be at the table, especially some buckwheat food because they will prevent those so-called modern diseases effectively.
Qinghai Yak Soup
Having a bowl of Qinghai Yak soup while listening to the folk song named “Qinghai Flowers”, you may feel you are really in Qinghai. Sheep and cattle in Qinghai marching in grassland and wandering around water. In their lifetime, hey absorb some precious and rare medical herbs when they eat a lot of cordyceps sinensis and Bulbus Fritillaria whose meat is fresh and delicate and contain less fat. The marrow of yak is the best nutrient for bones. Based on the original way of cutting yak bones in Qinghai, marrow just flows through the bones. When the beef and bones are boiled with unique ingredients, various nutritious materials will be melted in the soup, especially served with garlic sprouts, chopped green onions and silk noodles. Therefore, Qinghai yak soup is not only delicious but also nutritious.

Yaks, living in the unpolluted plateau, living on grass, whose meat is delicate, are the favorite of all people in Qinghai-Tibet Plateau. Having a bowl of yak soup will make people refreshed. There is a popular saying about the nutrition of yak soup, which is “Drinking more bone soup will add calcium and make people strong.”
